Sandakan Salted Fish Omelette

Ingredients
- 2 salted fish fillets, deboned and flaked
- 4 eggs
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 red chili, thinly sliced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Beat the eggs in a bowl and season with salt and pepper.
- Heat the vegetable oil in a non-stick pan over medium heat.
- Saute the onion, garlic, and red chili until fragrant.
- Add the flaked salted fish to the pan and cook for 2-3 minutes.
- Pour the beaten eggs over the salted fish mixture in the pan.
- Cook the omelette for 3-4 minutes or until the edges are set.
- Carefully flip the omelette and cook for another 2-3 minutes.
- Slide the omelette onto a plate and serve hot.
