Sandakan Salted Fish Omelette

Ingredients

  • 2 salted fish fillets, deboned and flaked
  • 4 eggs
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Beat the eggs in a bowl and season with salt and pepper.
  2. Heat the vegetable oil in a non-stick pan over medium heat.
  3. Saute the onion, garlic, and red chili until fragrant.
  4. Add the flaked salted fish to the pan and cook for 2-3 minutes.
  5. Pour the beaten eggs over the salted fish mixture in the pan.
  6. Cook the omelette for 3-4 minutes or until the edges are set.
  7. Carefully flip the omelette and cook for another 2-3 minutes.
  8. Slide the omelette onto a plate and serve hot.
