Sanga Fish (grilled Fish With Spicy Tomato Sauce)

Ingredients
- 4 whole fish (such as tilapia or sea bass), cleaned and scaled
- 2 cups tomato puree
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
- 2 tablespoons vegetable oil
- 1 lemon, cut into wedges
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix together the tomato puree, onion, garlic, ginger, paprika, cayenne pepper, thyme, salt, and black pepper to make the spicy tomato sauce.
- Brush the fish with vegetable oil and season with salt and black pepper.
- Grill the fish for about 5-7 minutes on each side, or until cooked through and slightly charred.
- While the fish is grilling, heat the spicy tomato sauce in a pan over medium heat for about 10 minutes, stirring occasionally.
- Once the fish is cooked, transfer it to a serving platter and spoon the spicy tomato sauce over the fish.
- Serve the Sanga Fish with lemon wedges and enjoy!
