Sanga Fish (grilled Fish With Spicy Tomato Sauce)

Ingredients

  • 4 whole fish (such as tilapia or sea bass), cleaned and scaled
  • 2 cups tomato puree
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons vegetable oil
  • 1 lemon, cut into wedges

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together the tomato puree, onion, garlic, ginger, paprika, cayenne pepper, thyme, salt, and black pepper to make the spicy tomato sauce.
  3. Brush the fish with vegetable oil and season with salt and black pepper.
  4. Grill the fish for about 5-7 minutes on each side, or until cooked through and slightly charred.
  5. While the fish is grilling, heat the spicy tomato sauce in a pan over medium heat for about 10 minutes, stirring occasionally.
  6. Once the fish is cooked, transfer it to a serving platter and spoon the spicy tomato sauce over the fish.
  7. Serve the Sanga Fish with lemon wedges and enjoy!
