Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 lb fish fillets, cut into small pieces
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
  3. Add the diced tomatoes and cook until they are soft.
  4. Add the fish fillets to the skillet and cook until they are fully cooked.
  5. Pour in the coconut milk and stir to combine. Let it simmer for 5 minutes.
  6. Add the sliced plantains to the skillet and gently mix them with the fish and sauce.
  7. Cover the skillet and let the mixture cook for 10-15 minutes, or until the plantains are tender.
  8. Season with salt and pepper to taste.
  9. Transfer the mixture to a pie dish and spread it evenly.
  10. Preheat the oven to 350°F (175°C).
  11. Bake the pie for 20-25 minutes, or until the top is golden brown.
  12. Remove from the oven and let it cool for a few minutes before serving.
