Sanga Pie (fish And Plantain Pie)

Ingredients
- 2 ripe plantains, peeled and sliced
- 1 lb fish fillets, cut into small pieces
- 1 onion, chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat the vegetable oil in a large skillet over medium heat.
- Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
- Add the diced tomatoes and cook until they are soft.
- Add the fish fillets to the skillet and cook until they are fully cooked.
- Pour in the coconut milk and stir to combine. Let it simmer for 5 minutes.
- Add the sliced plantains to the skillet and gently mix them with the fish and sauce.
- Cover the skillet and let the mixture cook for 10-15 minutes, or until the plantains are tender.
- Season with salt and pepper to taste.
- Transfer the mixture to a pie dish and spread it evenly.
- Preheat the oven to 350°F (175°C).
- Bake the pie for 20-25 minutes, or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
