Sangria-marinated Grilled Chicken Skewers
Sangria-Marinated Grilled Chicken Skewers are a delicious Spanish-inspired dish that combines the flavors of sangria with tender grilled chicken. This recipe is perfect for a summer barbecue or a festive gathering.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup red wine
- 1/4 cup orange juice
- 1/4 cup brandy
- 2 tablespoons honey
- 1 orange, sliced
- 1 lemon, sliced
- 1 lime, sliced
- 1/2 cup fresh strawberries, hulled and halved
- 1/2 cup fresh pineapple chunks
- Salt and pepper to taste
- 8-10 wooden or metal skewers
Instructions
- In a large bowl, combine the red wine, orange juice, brandy, honey, and a pinch of salt and pepper. Stir until the honey is dissolved.
- Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes, orange slices, lemon slices, lime slices, strawberries, and pineapple chunks onto the skewers, alternating the ingredients.
- Grill the skewers for 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
