Sangria-marinated Grilled Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup red wine
  • 1/4 cup orange juice
  • 1/4 cup brandy
  • 2 tablespoons honey
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 lime, sliced
  • 1/2 cup fresh strawberries, hulled and halved
  • 1/2 cup fresh pineapple chunks
  • Salt and pepper to taste
  • 8-10 wooden or metal skewers

Instructions

  1. In a large bowl, combine the red wine, orange juice, brandy, honey, and a pinch of salt and pepper. Stir until the honey is dissolved.
  2. Add the chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes, orange slices, lemon slices, lime slices, strawberries, and pineapple chunks onto the skewers, alternating the ingredients.
  5. Grill the skewers for 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
