Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 ripe plantains, peeled and cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp thyme
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the chicken thighs with salt, pepper, paprika, and cumin.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the chicken thighs on both sides, then remove and set aside.
- Add the chopped onion, garlic, and red bell pepper to the pot. Sauté until the vegetables are softened.
- Stir in the diced tomatoes, thyme, and chicken broth. Bring the mixture to a simmer.
- Return the browned chicken thighs to the pot. Add the plantain chunks. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and the plantains are tender.
