Santomean Spiced Pork Ribs
Santomean Spiced Pork Ribs are a delicious and flavorful dish from the cuisine of São Tomé and Príncipe. The ribs are marinated in a blend of aromatic spices and then cooked to perfection, resulting in tender and juicy meat with a kick of heat.
Ingredients
- 2 lbs pork ribs
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup apple cider vinegar
- 1/4 cup ketchup
- 1/4 cup honey
Instructions
- Preheat the oven to 300°F (150°C).
- In a small bowl, mix together the salt, black pepper, paprika, cayenne pepper, garlic powder, onion powder, and brown sugar to create the spice rub.
- Rub the spice mixture all over the pork ribs, covering them evenly.
- In a separate bowl, whisk together the soy sauce, apple cider vinegar, ketchup, and honey to make the marinade.
- Place the ribs in a large baking dish and pour the marinade over them, ensuring they are well coated.
- Cover the baking dish with foil and bake in the preheated oven for 1.5 hours.
- Remove the foil and increase the oven temperature to 400°F (200°C). Bake for an additional 30 minutes, basting the ribs with the pan juices every 10 minutes.
- Once the ribs are tender and caramelized, remove them from the oven and let them rest for a few minutes before serving.
