Santomean Spiced Pork Ribs

Ingredients

  • 2 lbs pork ribs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a small bowl, mix together the salt, black pepper, paprika, cayenne pepper, garlic powder, onion powder, and brown sugar to create the spice rub.
  3. Rub the spice mixture all over the pork ribs, covering them evenly.
  4. In a separate bowl, whisk together the soy sauce, apple cider vinegar, ketchup, and honey to make the marinade.
  5. Place the ribs in a large baking dish and pour the marinade over them, ensuring they are well coated.
  6. Cover the baking dish with foil and bake in the preheated oven for 1.5 hours.
  7. Remove the foil and increase the oven temperature to 400°F (200°C). Bake for an additional 30 minutes, basting the ribs with the pan juices every 10 minutes.
  8. Once the ribs are tender and caramelized, remove them from the oven and let them rest for a few minutes before serving.
