Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups chicken broth
  • 2 stalks lemongrass, smashed
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 inches fresh ginger, sliced
  • 2 tbsp soy sauce
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili flakes
  • 1 cup bean sprouts
  • 4 hard-boiled eggs, halved
  • 4 cups cooked rice
  • 1 cup crispy fried onions
  • 4 sprigs of cilantro, chopped
  • 4 limes, cut into wedges

Instructions

  1. In a large pot, combine the chicken pieces, chicken broth, lemongrass, garlic, onion, ginger, soy sauce, turmeric, cumin, coriander, and chili flakes. Bring to a boil, then reduce heat and simmer for 45 minutes.
  2. Remove the chicken pieces from the broth and shred the meat, discarding the bones and skin. Return the shredded chicken to the pot.
  3. To serve, place a scoop of rice in each bowl, top with shredded chicken, bean sprouts, a halved hard-boiled egg, and crispy fried onions. Ladle the hot broth over the toppings.
  4. Garnish with chopped cilantro and serve with lime wedges on the side.
