Saoto Soep (saoto Soup)
Saoto Soep, also known as Saoto Soup, is a traditional Surinamese soup that is packed with flavor and is often enjoyed as a hearty meal. This soup is made with a rich broth, tender chicken, and an array of delicious toppings.
Ingredients
- 1 whole chicken, cut into pieces
- 8 cups chicken broth
- 2 stalks lemongrass, smashed
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 inches fresh ginger, sliced
- 2 tbsp soy sauce
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili flakes
- 1 cup bean sprouts
- 4 hard-boiled eggs, halved
- 4 cups cooked rice
- 1 cup crispy fried onions
- 4 sprigs of cilantro, chopped
- 4 limes, cut into wedges
Instructions
- In a large pot, combine the chicken pieces, chicken broth, lemongrass, garlic, onion, ginger, soy sauce, turmeric, cumin, coriander, and chili flakes. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove the chicken pieces from the broth and shred the meat, discarding the bones and skin. Return the shredded chicken to the pot.
- To serve, place a scoop of rice in each bowl, top with shredded chicken, bean sprouts, a halved hard-boiled egg, and crispy fried onions. Ladle the hot broth over the toppings.
- Garnish with chopped cilantro and serve with lime wedges on the side.
