Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons cooking oil

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  2. Heat the remaining oil in the same wok. Add the chopped onion, minced garlic, and sliced chilies. Stir-fry until fragrant.
  3. Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
  4. Push the vegetables to the side of the wok and add the cooked rice. Stir-fry the rice for a few minutes, breaking up any clumps.
  5. Return the scrambled eggs to the wok and mix with the rice and vegetables.
  6. In a small bowl, mix together the soy sauce, oyster sauce, sugar, salt, and black pepper. Pour the sauce over the rice and stir-fry until everything is well combined and heated through.
  7. Transfer the village-style fried rice to a serving dish and garnish with sliced cucumbers and tomatoes, if desired.
