Ingredients

  • 4 salmon fillets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 lemon, thinly sliced
  • 4 sprigs of fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut four large pieces of parchment paper and fold them in half.
  3. Divide the sliced vegetables among the parchment paper, placing them on one side of the fold.
  4. Season the salmon fillets with salt and pepper, then place one fillet on top of the vegetables on each piece of parchment paper.
  5. Top each salmon fillet with a few slices of lemon and a sprig of thyme.
  6. Fold the parchment paper over the salmon and vegetables, then crimp the edges to seal the packets.
  7. Place the packets on a baking sheet and bake in the preheated oven for 15 minutes.
  8. Carefully open the packets (watch out for steam) and transfer the contents to plates.
  9. Serve the Sark Salmon en Papillote immediately, allowing each diner to open their own packet at the table.
