Ingredients

- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups fish or vegetable broth

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until softened.
- Add the carrots and celery, and cook for 5 minutes.
- Pour in the diced tomatoes and broth, then bring to a simmer.
- Add the mixed seafood and thyme, then season with salt and pepper.
- Cover and simmer for 30-40 minutes, or until the seafood is cooked through.
- Adjust seasoning if needed, then serve hot.
