Sarma (albanian Stuffed Cabbage Rolls)
Sarma is a traditional dish in Arbëreshë cuisine, consisting of delicious stuffed cabbage rolls. This recipe is a classic comfort food that is perfect for family gatherings and special occasions.
Ingredients
- 1 large head of cabbage
- 1 lb ground beef
- 1 cup rice
- 1 onion, finely chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 can (28 oz) crushed tomatoes
- 2 cups beef or vegetable broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a bowl, mix together the ground beef, rice, onion, parsley, mint, olive oil, salt, and pepper.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the stuffed cabbage rolls in a large pot. Pour the crushed tomatoes and broth over the rolls. Cover and simmer for 1.5-2 hours, until the cabbage is tender and the filling is cooked through.
- Serve the sarma hot, spooning some of the tomato sauce over the top.
