Sarma (albanian Stuffed Cabbage Rolls)

Ingredients

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1 cup rice
  • 1 onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef or vegetable broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a bowl, mix together the ground beef, rice, onion, parsley, mint, olive oil, salt, and pepper.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
  4. Place the stuffed cabbage rolls in a large pot. Pour the crushed tomatoes and broth over the rolls. Cover and simmer for 1.5-2 hours, until the cabbage is tender and the filling is cooked through.
  5. Serve the sarma hot, spooning some of the tomato sauce over the top.
