Sarma (armenian Stuffed Cabbage Rolls)
Sarma is a traditional Armenian dish made of cabbage leaves stuffed with a flavorful mixture of rice, ground meat, and herbs. This dish is a labor of love, but the result is a delicious and comforting meal that is perfect for sharing with family and friends.
Ingredients
- 1 head of cabbage
- 1 cup of rice
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 can of tomato sauce
Instructions
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves, one at a time, and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a large bowl, mix together the rice, ground meat, onion, herbs, olive oil, paprika, salt, and pepper.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go.
- Place the rolled cabbage leaves in a large pot, seam side down, and pour the tomato sauce over them.
- Cover the pot and cook the sarma over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Serve the sarma hot, with a dollop of yogurt or sour cream on top, if desired.
