Sarma (armenian Stuffed Cabbage Rolls)

Ingredients

  • 1 head of cabbage
  • 1 cup of rice
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh dill
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 can of tomato sauce

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the cabbage leaves, one at a time, and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a large bowl, mix together the rice, ground meat, onion, herbs, olive oil, paprika, salt, and pepper.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go.
  4. Place the rolled cabbage leaves in a large pot, seam side down, and pour the tomato sauce over them.
  5. Cover the pot and cook the sarma over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
  6. Serve the sarma hot, with a dollop of yogurt or sour cream on top, if desired.
