Sarmale (cabbage Rolls)
Sarmale is a traditional dish in Romani cuisine, consisting of cabbage rolls filled with a savory mixture of rice, ground meat, and spices. This dish is a staple at family gatherings and special occasions, and it's a labor of love to prepare.
Ingredients
- 1 large head of cabbage
- 1 cup rice
- 1 lb ground pork
- 1 onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup tomato sauce
- 1/4 cup sour cabbage juice (optional)
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves, trying to keep them whole, and blanch them in the boiling water for 5 minutes. Remove and set aside to cool.
- In a large bowl, mix together the rice, ground pork, onion, dill, parsley, tomato sauce, sour cabbage juice, salt, and pepper.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the cabbage rolls in a large pot, seam side down, and pour enough water to cover them. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, until the cabbage and filling are cooked through.
