Sarmale De Vinete (aromanian Eggplant Rolls)

Ingredients

  • 2 large eggplants
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.
  3. Sprinkle the eggplant slices with salt and let them sit for 10 minutes to release excess moisture.
  4. In a bowl, combine the cooked rice, chopped onion, minced garlic, diced tomato, parsley, dill, paprika, salt, and pepper.
  5. Blot the eggplant slices with paper towels to remove the excess moisture.
  6. Place a spoonful of the rice mixture on each eggplant slice and roll it up.
  7. Heat the olive oil in a large skillet over medium heat.
  8. Place the eggplant rolls seam side down in the skillet and cook for 2-3 minutes on each side until golden brown.
  9. Transfer the rolls to a baking dish and bake for 15-20 minutes, until the eggplant is tender.
  10. Serve the sarmale de vinete hot, garnished with additional fresh herbs if desired.
