Ingredients
- 2 large eggplants
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced

- 1/4 cup chopped fresh dill
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.
- Sprinkle the eggplant slices with salt and let them sit for 10 minutes to release excess moisture.
- In a bowl, combine the cooked rice, chopped onion, minced garlic, diced tomato, parsley, dill, paprika, salt, and pepper.
- Blot the eggplant slices with paper towels to remove the excess moisture.
- Place a spoonful of the rice mixture on each eggplant slice and roll it up.
- Heat the olive oil in a large skillet over medium heat.
- Place the eggplant rolls seam side down in the skillet and cook for 2-3 minutes on each side until golden brown.
- Transfer the rolls to a baking dish and bake for 15-20 minutes, until the eggplant is tender.
- Serve the sarmale de vinete hot, garnished with additional fresh herbs if desired.
