Saskatoon Berry General Tso's Chicken (萨斯卡通莓将军鸡)
萨斯卡通莓将军鸡 (Saskatoon Berry General Tso's Chicken) is a delightful fusion dish that combines the traditional Chinese flavors of General Tso's chicken with the sweet and tangy taste of Saskatoon berries, a popular Canadian fruit.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup Saskatoon berries
- 1/4 cup soy sauce
- 3 tbsp rice vinegar
- 3 tbsp hoisin sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 2 green onions, chopped (for garnish)
Instructions
- In a large bowl, toss the chicken pieces with cornstarch until evenly coated.
- Dip the cornstarch-coated chicken pieces into the beaten eggs, then set aside.
- In a small saucepan, combine the Saskatoon berries, soy sauce, rice vinegar, hoisin sauce, honey, sesame oil, ginger, garlic, and red pepper flakes. Cook over medium heat, stirring occasionally, until the sauce thickens and the berries break down, about 10 minutes.
- While the sauce is cooking, heat 2 inches of oil in a large skillet over medium-high heat. Fry the egg-coated chicken pieces in batches until golden brown and cooked through, about 4-5 minutes per batch. Drain on paper towels.
- Toss the fried chicken pieces in the Saskatoon berry sauce until evenly coated.
- Transfer the General Tso's chicken to a serving dish and garnish with chopped green onions.
