Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup Saskatoon berries
- 1 red bell pepper, diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 3 tablespoons honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together rice vinegar, soy sauce, honey, and cornstarch. Set aside.
- Heat vegetable oil in a large pan over medium-high heat. Add shrimp and season with salt and pepper. Cook until pink and opaque, then remove from the pan and set aside.
- In the same pan, add onion, garlic, and red bell pepper. Sauté until the vegetables are tender.
- Add Saskatoon berries to the pan and cook for 2-3 minutes until they start to soften.
- Pour the vinegar and soy sauce mixture into the pan. Stir and cook until the sauce thickens.
- Return the cooked shrimp to the pan and toss to coat with the sauce. Cook for an additional 2-3 minutes.
- Remove from heat and serve the Saskatoon Berry Sweet and Sour Shrimp hot with steamed rice.
