Ingredients
- 300g rice vermicelli noodles
- 12 chicken satay skewers
- 1 cucumber, julienned
- 1 onion, thinly sliced
- 4 hard-boiled eggs, halved
- 1 cup bean sprouts
- 1 cup shredded cabbage
- 1 cup satay sauce
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1 teaspoon chili paste
- Chopped peanuts for garnish
Instructions
- Soak the rice vermicelli noodles in hot water for 5 minutes, then drain and set aside.
- Prepare the satay sauce by heating the vegetable oil in a saucepan, then adding the soy sauce, lime juice, sugar, and chili paste. Cook for 3-4 minutes until the sauce thickens.
- Grill the chicken satay skewers until cooked, then slice the chicken into bite-sized pieces.
- Arrange the noodles, cucumber, onion, bean sprouts, and cabbage on a serving plate.
- Place the sliced chicken satay on top of the noodles and drizzle with the prepared satay sauce.
- Garnish with hard-boiled eggs and chopped peanuts.
