Ingredients

  • 300g rice vermicelli noodles
  • 12 chicken satay skewers
  • 1 cucumber, julienned
  • 1 onion, thinly sliced
  • 4 hard-boiled eggs, halved
  • 1 cup bean sprouts
  • 1 cup shredded cabbage
  • 1 cup satay sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • 1 teaspoon chili paste
  • Chopped peanuts for garnish

Instructions

  1. Soak the rice vermicelli noodles in hot water for 5 minutes, then drain and set aside.
  2. Prepare the satay sauce by heating the vegetable oil in a saucepan, then adding the soy sauce, lime juice, sugar, and chili paste. Cook for 3-4 minutes until the sauce thickens.
  3. Grill the chicken satay skewers until cooked, then slice the chicken into bite-sized pieces.
  4. Arrange the noodles, cucumber, onion, bean sprouts, and cabbage on a serving plate.
  5. Place the sliced chicken satay on top of the noodles and drizzle with the prepared satay sauce.
