Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into cubes
  • 1 cup (240ml) coconut milk
  • 3 tablespoons (45ml) soy sauce
  • 2 tablespoons (30ml) fish sauce
  • 2 tablespoons (30ml) brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) ground turmeric
  • 1 teaspoon (5g) ground coriander
  • 1 teaspoon (5g) ground cumin
  • 1 teaspoon (5g) paprika
  • 1 tablespoon (15ml) vegetable oil
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, garlic, turmeric, coriander, cumin, and paprika. Mix well to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto the soaked skewers.
  5. Brush the grill grates with vegetable oil to prevent sticking.
  6. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.
  7. Remove from the grill and let the skewers rest for a few minutes before serving.
