Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into cubes
- 1 cup (240ml) coconut milk
- 3 tablespoons (45ml) soy sauce
- 2 tablespoons (30ml) fish sauce
- 2 tablespoons (30ml) brown sugar
- 2 cloves garlic, minced
- 1 teaspoon (5g) ground turmeric
- 1 teaspoon (5g) ground coriander
- 1 teaspoon (5g) ground cumin
- 1 teaspoon (5g) paprika
- 1 tablespoon (15ml) vegetable oil
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, garlic, turmeric, coriander, cumin, and paprika. Mix well to make the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto the soaked skewers.
- Brush the grill grates with vegetable oil to prevent sticking.
- Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.
- Remove from the grill and let the skewers rest for a few minutes before serving.
