Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into strips
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon garlic, minced
  • 1 teaspoon lemongrass, minced
  • 1/4 cup peanut butter
  • 1/4 cup water
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon red pepper flakes
  • 8-10 wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, curry powder, turmeric, garlic, and lemongrass. Add the chicken strips and marinate for at least 1 hour.
  2. Thread the marinated chicken strips onto the soaked skewers.
  3. Preheat the grill or stovetop grill pan over medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
  4. While the chicken is grilling, make the peanut sauce. In a saucepan, combine peanut butter, water, lime juice, soy sauce, brown sugar, and red pepper flakes. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
  5. Serve the grilled chicken satay with the warm peanut sauce for dipping.
