Satay Moan (lemongrass Chicken Skewers)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 3 stalks lemongrass, tough outer layers removed, finely chopped
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 1/2 tsp turmeric powder
  • 1/2 tsp black pepper
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the lemongrass, garlic, shallots, fish sauce, soy sauce, brown sugar, vegetable oil, turmeric powder, and black pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
  4. Grill the skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.
  5. Remove the skewers from the grill and let them rest for a few minutes before serving.
