Satay Moan (lemongrass Chicken Skewers)
Satay Moan, or Lemongrass Chicken Skewers, is a popular Cambodian street food dish that is bursting with flavor. The combination of lemongrass, garlic, and spices creates a fragrant and delicious marinade for the chicken, which is then grilled to perfection. Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 3 stalks lemongrass, tough outer layers removed, finely chopped
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp vegetable oil
- 1/2 tsp turmeric powder
- 1/2 tsp black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the lemongrass, garlic, shallots, fish sauce, soy sauce, brown sugar, vegetable oil, turmeric powder, and black pepper to make the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
- Grill the skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
