Satay Moo (grilled Pork Skewers)

Ingredients
- 1 pound pork loin, cut into thin strips
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 cup coconut milk
- 1/4 cup creamy peanut butter
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1/4 cup water
- 8-10 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine soy sauce, brown sugar, garlic, turmeric, coriander, cumin, and cayenne pepper. Add the pork strips and marinate for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated pork strips onto the soaked bamboo skewers.
- Grill the pork skewers for 3-4 minutes on each side, or until fully cooked.
- While the pork is grilling, prepare the peanut sauce by combining coconut milk, peanut butter, lime juice, fish sauce, brown sugar, and water in a saucepan over medium heat. Stir until smooth and heated through.
- Serve the grilled pork skewers with the warm peanut sauce for dipping.
