Ingredients

  • 1 pound pork loin, cut into thin strips
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup coconut milk
  • 1/4 cup creamy peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1/4 cup water
  • 8-10 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine soy sauce, brown sugar, garlic, turmeric, coriander, cumin, and cayenne pepper. Add the pork strips and marinate for at least 1 hour.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated pork strips onto the soaked bamboo skewers.
  4. Grill the pork skewers for 3-4 minutes on each side, or until fully cooked.
  5. While the pork is grilling, prepare the peanut sauce by combining coconut milk, peanut butter, lime juice, fish sauce, brown sugar, and water in a saucepan over medium heat. Stir until smooth and heated through.
  6. Serve the grilled pork skewers with the warm peanut sauce for dipping.
