Satay Sensation

Ingredients

  • 1 lb chicken or beef, cut into thin strips
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • 1/4 cup peanut butter
  • 1/4 cup water
  • 1 tbsp lime juice
  • Salt to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, turmeric, cumin, coriander, chili powder, and salt. Add the chicken or beef strips and marinate for at least 1 hour.
  2. Thread the marinated meat onto the soaked skewers.
  3. Preheat the grill to medium-high heat. Grill the skewers for 3-4 minutes on each side, or until fully cooked.
  4. While the meat is grilling, prepare the peanut sauce by combining peanut butter, water, and lime juice in a saucepan. Heat over low heat until well combined and heated through.
  5. Serve the satay skewers with the warm peanut sauce.
