Ingredients

  • 1 lb chicken or beef, thinly sliced
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 cup peanut butter
  • 1/4 cup water
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, curry powder, turmeric, cumin, coriander, salt, and pepper. Add the sliced meat and marinate for at least 1 hour.
  2. In a saucepan, combine peanut butter and water. Cook over low heat, stirring constantly, until smooth and well combined. Set aside.
  3. Thread marinated meat onto soaked skewers.
  4. Heat a grill or stovetop grill pan over medium-high heat. Cook skewers for 3-4 minutes on each side, or until meat is cooked through and slightly charred.
  5. Serve the satay skewers with the prepared peanut sauce.
