Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1/2 cup peanut butter
  • 1/4 cup water
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix the coconut milk, soy sauce, brown sugar, curry powder, and turmeric. Add the chicken cubes and marinate for at least 1 hour.
  2. Thread the marinated chicken onto the soaked skewers.
  3. Heat the vegetable oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
  4. Add the marinated chicken skewers to the pan and cook until the chicken is fully cooked, about 10-12 minutes.
  5. In a separate saucepan, combine the peanut butter and water. Heat over low heat, stirring constantly, until the sauce is smooth and heated through.
  6. Season the peanut sauce with salt and pepper to taste.
  7. Serve the chicken skewers with the warm peanut sauce.
