Ingredients
- 1 lb chicken breast, cut into cubes
- 1 cup coconut milk
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1/2 cup peanut butter
- 1/4 cup water
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, mix the coconut milk, soy sauce, brown sugar, curry powder, and turmeric. Add the chicken cubes and marinate for at least 1 hour.
- Thread the marinated chicken onto the soaked skewers.
- Heat the vegetable oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
- Add the marinated chicken skewers to the pan and cook until the chicken is fully cooked, about 10-12 minutes.
- In a separate saucepan, combine the peanut butter and water. Heat over low heat, stirring constantly, until the sauce is smooth and heated through.
- Season the peanut sauce with salt and pepper to taste.
- Serve the chicken skewers with the warm peanut sauce.
