Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs, cut into cubes
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) kecap manis (sweet soy sauce)
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the soy sauce, kecap manis, garlic, coriander, cumin, brown sugar, and lime juice. Add the chicken cubes and marinate for at least 1 hour in the refrigerator.
  2. Thread the marinated chicken onto the soaked skewers.
  3. Preheat the grill to medium-high heat and lightly oil the grate.
  4. Grill the chicken skewers for 3-4 minutes on each side, or until fully cooked and slightly charred.
  5. Serve the chicken satay with peanut sauce and steamed rice.
