Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into small pieces
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon vegetable oil
  • 4 slider buns
  • 1/4 cup sliced cucumbers
  • 1/4 cup sliced red onions
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a bowl, combine the soy sauce, brown sugar, garlic, coriander, turmeric, cumin, and cayenne pepper. Add the chicken pieces and marinate for at least 15 minutes.
  2. Thread the marinated chicken onto skewers and grill or cook on a stovetop grill pan for 3-4 minutes per side, until cooked through.
  3. Brush the slider buns with vegetable oil and toast on the grill or stovetop until lightly browned.
  4. Assemble the sliders by placing the grilled chicken on the buns and topping with sliced cucumbers, red onions, and fresh cilantro.
