Sate Ayam (chicken Satay Sliders)

Ingredients
- 1 lb boneless, skinless chicken thighs, cut into small pieces
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 tablespoon vegetable oil
- 4 slider buns
- 1/4 cup sliced cucumbers
- 1/4 cup sliced red onions
- 1/4 cup chopped fresh cilantro
Instructions
- In a bowl, combine the soy sauce, brown sugar, garlic, coriander, turmeric, cumin, and cayenne pepper. Add the chicken pieces and marinate for at least 15 minutes.
- Thread the marinated chicken onto skewers and grill or cook on a stovetop grill pan for 3-4 minutes per side, until cooked through.
- Brush the slider buns with vegetable oil and toast on the grill or stovetop until lightly browned.
- Assemble the sliders by placing the grilled chicken on the buns and topping with sliced cucumbers, red onions, and fresh cilantro.
