Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into cubes
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp sweet soy sauce (kecap manis)
  • 1 tbsp lime juice
  • 1/4 cup water
  • Salt to taste
  • 12-16 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the soy sauce, brown sugar, minced garlic, ground coriander, ground turmeric, and cayenne pepper. Add the chicken cubes and marinate for at least 1 hour.
  2. Thread the marinated chicken onto the soaked bamboo skewers.
  3. Preheat the grill to medium-high heat. Grill the chicken skewers for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  4. While the chicken is grilling, make the peanut sauce. In a saucepan, combine the peanut butter, coconut milk, sweet soy sauce, lime juice, and water. Cook over low heat, stirring constantly, until the sauce is smooth and heated through. Season with salt to taste.
  5. Serve the grilled chicken skewers with the warm peanut sauce on the side.
