Sate Ayam Pedas (spicy Chicken Satay)

Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup peanut butter
  • 1/4 cup water
  • Salt to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the chicken, onion, garlic, red chilies, turmeric powder, coriander powder, coconut milk, soy sauce, and brown sugar. Marinate for at least 1 hour.
  2. Thread the marinated chicken onto the soaked skewers.
  3. Preheat the grill to medium-high heat. Grill the chicken skewers for 10-12 minutes, turning occasionally, until cooked through.
  4. While the chicken is grilling, make the peanut sauce by combining the peanut butter, water, and salt in a saucepan. Cook over low heat until the sauce thickens.
  5. Serve the grilled chicken skewers with the spicy peanut sauce.
