Ingredients

  • 1 lb (450g) chicken, beef, or tofu, cut into cubes
  • 1 cup (250g) roasted peanuts
  • 4 cloves garlic
  • 2 shallots
  • 2 red chilies
  • 2 tbsp brown sugar
  • 1 tbsp tamarind paste
  • 1/2 cup (120ml) coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 8-10 bamboo skewers, soaked in water

Instructions

  1. Prepare the marinade by blending the roasted peanuts, garlic, shallots, red chilies, brown sugar, tamarind paste, and coconut milk in a food processor until smooth.
  2. Transfer the marinade to a bowl and add the soy sauce and vegetable oil. Mix well.
  3. Marinate the meat or tofu in the mixture for at least 1 hour, or preferably overnight in the refrigerator.
  4. Thread the marinated meat or tofu onto the soaked bamboo skewers.
  5. Heat a grill or grill pan over medium-high heat. Grill the skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
  6. While grilling the skewers, prepare the peanut sauce by heating the remaining marinade in a saucepan over low heat until it thickens.
  7. Serve the grilled skewers with the warm peanut sauce.
