Sate Gai (lao-style Chicken Satay)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into thin strips
  • 1/4 cup coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, fish sauce, soy sauce, brown sugar, curry powder, turmeric, garlic, and shallot to make the marinade.
  2. Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Thread the marinated chicken strips onto the soaked wooden skewers.
  4. Heat a grill or grill pan over medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
  5. Serve the Sate Gai hot with peanut sauce and enjoy!
