Sate Kambing Pedas (spicy Lamb Satay)

Ingredients
- 1 lb (450g) lamb, cut into cubes
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric powder
- 1 tsp chili powder
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp vegetable oil
- Salt to taste
- Bamboo skewers, soaked in water
Instructions
- In a bowl, mix together garlic, shallot, ground coriander, ground cumin, turmeric powder, chili powder, soy sauce, brown sugar, vegetable oil, and salt to create the marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Thread the marinated lamb onto the soaked bamboo skewers.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill the lamb skewers for about 3-4 minutes on each side, or until the meat is cooked to your desired doneness.
- Remove from the grill and let it rest for a few minutes before serving.
