Ingredients
- 500g beef, thinly sliced
- 20 bamboo skewers, soaked in water
- 3 shallots, chopped
- 4 cloves garlic, minced
- 2 lemongrass stalks, white part only, finely chopped
- 3 kaffir lime leaves, finely chopped
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup coconut milk
- 1 cup water
- 200g peanuts, roasted and ground
- 3 red chilies, seeded and chopped
- 2 Tbsp tamarind paste
- 2 Tbsp palm sugar
- 2 Tbsp vegetable oil
Instructions
- In a bowl, marinate the beef slices with shallots, garlic, lemongrass, kaffir lime leaves, turmeric powder, coriander powder, cumin powder, salt, and pepper. Let it sit for 30 minutes.
- Thread the marinated beef onto the soaked bamboo skewers.
- In a saucepan, combine coconut milk and water. Bring to a simmer and add the beef skewers. Cook for 10-15 minutes, turning occasionally, until the beef is cooked through and the sauce thickens.
- Meanwhile, prepare the spicy peanut sauce by blending roasted peanuts, red chilies, tamarind paste, palm sugar, and a little water in a food processor until smooth.
- Heat vegetable oil in a pan and sauté the ground peanut mixture until fragrant and the oil separates.
- Serve the grilled beef satay with the spicy peanut sauce.
