Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 eggs, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, melted
  • 12 sheets phyllo dough

Instructions

  1. In a large bowl, combine the chopped spinach, feta cheese, dill, parsley, green onions, eggs, salt, pepper, and nutmeg. Mix well.
  2. Preheat the oven to 350°F (175°C). Lightly grease a mini muffin tin.
  3. Place one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Top with another sheet of phyllo and brush with butter. Repeat until you have 6 layers.
  4. Cut the layered phyllo into 12 squares. Gently press each square into the mini muffin tin to form a phyllo cup.
  5. Spoon the spinach and feta mixture into each phyllo cup, filling it to the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the phyllo is golden brown and crispy.
  7. Remove from the oven and let the spanakopita bites cool in the tin for a few minutes before transferring to a serving platter.
