Spanakopita is a traditional Greek savory pastry filled with spinach, feta cheese, and herbs, all encased in layers of crispy phyllo dough. This recipe puts a unique spin on the classic dish by shaping it into satisfying triangles, perfect for a snack or appetizer.
Ingredients
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 eggs, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- 16 sheets phyllo dough
Instructions
- In a large bowl, combine the chopped spinach, feta cheese, dill, parsley, green onions, eggs, salt, pepper, and nutmeg. Mix well.
- Preheat the oven to 350°F (175°C). Place one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Top with another sheet of phyllo and brush with butter. Repeat with 4 more sheets of phyllo, brushing each with butter.
- Cut the layered phyllo stack into 6 equal strips, each about 3 inches wide.
- Place a spoonful of the spinach mixture at the bottom of each strip. Fold one corner of the phyllo diagonally over the filling to form a triangle. Continue folding the triangle onto itself. Repeat with the remaining phyllo and spinach mixture.
- Place the assembled triangles on a baking sheet and brush the tops with the remaining melted butter.
- Bake in the preheated oven for 20-25 minutes, or until the triangles are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
