Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 16 sheets phyllo dough

Instructions

  1. In a large bowl, combine the chopped spinach, feta cheese, dill, parsley, green onions, eggs, salt, pepper, and nutmeg. Mix well.
  2. Preheat the oven to 350°F (175°C). Place one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Top with another sheet of phyllo and brush with butter. Repeat with 4 more sheets of phyllo, brushing each with butter.
  3. Cut the layered phyllo stack into 6 equal strips, each about 3 inches wide.
  4. Place a spoonful of the spinach mixture at the bottom of each strip. Fold one corner of the phyllo diagonally over the filling to form a triangle. Continue folding the triangle onto itself. Repeat with the remaining phyllo and spinach mixture.
  5. Place the assembled triangles on a baking sheet and brush the tops with the remaining melted butter.
  6. Bake in the preheated oven for 20-25 minutes, or until the triangles are golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes before serving.
