Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups walnuts
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp ground coriander
  • 1/2 tsp ground fenugreek
  • 1/2 tsp ground marigold
  • 1/2 tsp ground blue fenugreek
  • 1/2 tsp ground hot pepper
  • 1/2 cup white wine vinegar
  • Salt to taste
  • Water

Instructions

  1. In a large pot, place the chicken pieces and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
  2. While the chicken is cooking, prepare the walnut sauce. In a food processor, blend the walnuts, onion, garlic, and spices until smooth.
  3. Once the chicken is cooked, remove it from the pot and set aside. Reserve the cooking liquid.
  4. In a separate large pot, combine the walnut sauce, white wine vinegar, and 2 cups of the reserved cooking liquid. Cook over low heat, stirring constantly, until the sauce thickens.
  5. Add the cooked chicken pieces to the sauce and simmer for an additional 10 minutes.
  6. Remove from heat and let the flavors meld for a few minutes before serving.
