Saudi Arabian Kabsa Rice With Chicken
Kabsa is a traditional Saudi Arabian rice dish that is full of flavor and spices. This recipe combines fragrant basmati rice with tender chicken, creating a delicious and aromatic meal that is perfect for sharing with family and friends.
Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 2 onions, chopped
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 3 tbsp kabsa spice mix
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until they are soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the kabsa spice mix and garlic, and cook for another 2 minutes.
- Add the tomatoes, raisins, and almonds to the pot, and cook for 5 minutes.
- Stir in the basmati rice and chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
