Saudi Arabian Kabsa Rice With Chicken

Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 3 tbsp kabsa spice mix
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until they are soft and translucent.
  2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. Stir in the kabsa spice mix and garlic, and cook for another 2 minutes.
  4. Add the tomatoes, raisins, and almonds to the pot, and cook for 5 minutes.
  5. Stir in the basmati rice and chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and serve hot.
