Saudi Arabian Murtabak With Spiced Beef And Cheese

Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- Salt and pepper to taste
- 4 large eggs
- 1 cup shredded cheese
- 4 large roti or tortillas
- 2 tbsp vegetable oil
Instructions
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
- Stir in the cumin, coriander, turmeric, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and set aside.
- In a bowl, beat the eggs and stir in the shredded cheese.
- Place a roti or tortilla on a clean surface. Spoon a portion of the beef mixture onto one half of the roti, then pour a portion of the egg and cheese mixture over the beef.
- Fold the other half of the roti over the filling to create a half-moon shape. Press the edges to seal.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Cook the murtabak for 2-3 minutes on each side, or until golden brown and the cheese is melted.
- Repeat with the remaining roti and filling, adding more oil to the skillet as needed.
- Serve the murtabak hot, cut into wedges, and enjoy!
