Saudi Arabian Murtabak With Spiced Beef And Cheese

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 4 large eggs
  • 1 cup shredded cheese
  • 4 large roti or tortillas
  • 2 tbsp vegetable oil

Instructions

  1. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  2. Stir in the cumin, coriander, turmeric, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and set aside.
  3. In a bowl, beat the eggs and stir in the shredded cheese.
  4. Place a roti or tortilla on a clean surface. Spoon a portion of the beef mixture onto one half of the roti, then pour a portion of the egg and cheese mixture over the beef.
  5. Fold the other half of the roti over the filling to create a half-moon shape. Press the edges to seal.
  6. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Cook the murtabak for 2-3 minutes on each side, or until golden brown and the cheese is melted.
  7. Repeat with the remaining roti and filling, adding more oil to the skillet as needed.
  8. Serve the murtabak hot, cut into wedges, and enjoy!
