Saudi Arabian Mutabbaq With Spiced Beef Filling

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup water
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix the flour and salt. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. In a skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Add the cumin, coriander, turmeric, paprika, salt, and pepper. Cook for another 5 minutes. Remove from heat and let it cool.
  3. Divide the dough into 4 equal portions. Roll each portion into a thin circle on a floured surface.
  4. Place a portion of the beef filling on one half of each dough circle. Fold the other half over the filling and press the edges to seal.
  5. Heat oil in a skillet over medium heat. Cook each Mutabbaq until golden and crispy on both sides.
  6. Remove from the skillet and drain on paper towels. Serve hot.
