Ingredients

  • 4 Italian sausages
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the sausages and cook until browned on all sides, about 8 minutes. Remove from the skillet and set aside.
  3. Heat the remaining tablespoon of olive oil in the same skillet. Add the peppers, onion, and garlic. Cook until the vegetables are tender, about 5 minutes.
  4. Stir in the diced tomatoes, oregano, basil, salt, and pepper. Return the sausages to the skillet.
  5. Cover and simmer for 10 minutes, or until the sausages are cooked through.
  6. Serve the sausage and peppers hot, with crusty bread or over pasta.
