Ingredients

  • 1 lb (450g) smoked sausage, sliced
  • 2 onions, chopped
  • 3 carrots, sliced
  • 4 potatoes, diced
  • 4 cups (1L) beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves

Instructions

  1. In a large pot, brown the sausage over medium heat for 5 minutes.
  2. Add the onions and carrots, and cook for another 5 minutes.
  3. Add the potatoes, beef broth, salt, black pepper, and bay leaves. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the vegetables are tender.
  4. Remove the bay leaves before serving.
