Savor the Sahel (Thiébou Guinar)
Thiébou Guinar, also known as the national dish of Senegal, is a flavorful and aromatic fish and rice dish that is popular in West Africa. This dish is a staple in Senegalese cuisine and is often enjoyed with family and friends.
Ingredients
- 2 lbs whole fish (such as red snapper or grouper), cleaned and scaled
- 2 cups rice
- 2 onions, sliced
- 4 tomatoes, diced
- 4 carrots, peeled and cut into chunks
- 2 eggplants, cut into chunks
- 4 garlic cloves, minced
- 1 scotch bonnet pepper, whole
- 1/4 cup tomato paste
- 1/4 cup vegetable oil
- 1 bunch parsley, chopped
- 1 bunch cilantro, chopped
- 4 cups water
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
- Add the tomato paste and cook for 2-3 minutes, stirring constantly.
- Add the tomatoes, carrots, and eggplants to the pot. Cook for another 5 minutes.
- Place the seasoned fish on top of the vegetables in the pot. Add the water, parsley, and cilantro. Cover and simmer for 30 minutes.
- Remove the fish from the pot and set aside. Add the rice to the pot, stirring to combine with the vegetables and cooking liquid. Place the fish on top of the rice.
- Cover the pot and cook for an additional 20 minutes, or until the rice is tender and the fish is fully cooked.
- Remove the scotch bonnet pepper before serving. Serve the Thiébou Guinar hot and enjoy!
