Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Season the beef stew meat with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the carrots, potatoes, and green beans to the pot. Stir and cook for a few minutes.
- Return the browned beef to the pot. Add the beef broth, diced tomatoes, paprika, cumin, and thyme. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning if needed. Serve the savory beef stew hot and enjoy!
