Savory Fritters, also known as Maddur Vada, are a popular snack from Karnataka Cuisine. These crispy and flavorful fritters are made with a combination of semolina, rice flour, and spices, making them a delightful treat for any time of the day.
Ingredients
- 1 cup semolina
- 1/2 cup rice flour
- 1/2 cup finely chopped onion
- 2-3 green chilies, finely chopped
- 1/4 cup fresh coriander leaves, chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- Oil for frying
Instructions
- In a mixing bowl, combine semolina, rice flour, chopped onion, green chilies, coriander leaves, cumin seeds, black pepper, salt, and baking soda.
- Add a little water at a time to form a thick batter. Let it rest for 10 minutes.
- Heat oil in a deep pan over medium heat.
- Take a small portion of the batter and flatten it slightly on your palm. Carefully slide it into the hot oil.
- Fry the fritters until they turn golden brown and crispy on both sides.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- Serve the savory fritters hot with chutney or sauce of your choice.
