Ingredients

  • 10 small Indian eggplants, slit
  • 1/4 cup peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup desiccated coconut
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/4 cup tamarind pulp
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste

Instructions

  1. In a pan, dry roast peanuts, sesame seeds, and desiccated coconut until golden. Grind to a fine paste with a little water.
  2. Heat oil in a pan, add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
  4. Add the ground paste and tamarind pulp. Cook for 5 minutes.
  5. Stuff the slit eggplants with the prepared masala.
  6. Add stuffed eggplants to the pan, cover, and cook on low heat for 15-20 minutes, stirring occasionally.
  7. Sprinkle garam masala and fresh coriander leaves. Serve hot with paratha.
