Savory Hyderabadi Bagara Baingan is a traditional dish from the rich culinary heritage of Hyderabad, India. This flavorful eggplant curry is a perfect blend of aromatic spices and tangy tamarind, making it a delightful addition to any meal.
Ingredients
- 10 small Indian eggplants, slit
- 1/4 cup peanuts
- 1/4 cup sesame seeds
- 1/4 cup desiccated coconut
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1/4 cup tamarind pulp
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
Instructions
- In a pan, dry roast peanuts, sesame seeds, and desiccated coconut until golden. Grind to a fine paste with a little water.
- Heat oil in a pan, add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
- Add the ground paste and tamarind pulp. Cook for 5 minutes.
- Stuff the slit eggplants with the prepared masala.
- Add stuffed eggplants to the pan, cover, and cook on low heat for 15-20 minutes, stirring occasionally.
- Sprinkle garam masala and fresh coriander leaves. Serve hot with paratha.
