Savory Lamb and Potato Stew (Toyugun Shorbası)

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 green bell pepper, diced
  • 4 cups beef or lamb broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb cubes and cook until browned on all sides.
  2. Add the chopped onion and garlic to the pot and sauté until softened.
  3. Stir in the diced potatoes, chopped tomatoes, and green bell pepper. Cook for a few minutes, then add the ground cumin, paprika, salt, and pepper.
  4. Pour in the beef or lamb broth and bring the stew to a boil. Reduce the heat, cover the pot, and simmer for about 45 minutes or until the lamb and potatoes are tender.
  5. Adjust the seasoning if needed and serve the Toyugun Shorbası hot, garnished with fresh parsley.
