Savory Lamb and Potato Stew (Toyugun Shorbası)
Toyugun Shorbası is a traditional Azerbaijani savory lamb and potato stew that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 lb lamb, cut into cubes
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1 green bell pepper, diced
- 4 cups beef or lamb broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb cubes and cook until browned on all sides.
- Add the chopped onion and garlic to the pot and sauté until softened.
- Stir in the diced potatoes, chopped tomatoes, and green bell pepper. Cook for a few minutes, then add the ground cumin, paprika, salt, and pepper.
- Pour in the beef or lamb broth and bring the stew to a boil. Reduce the heat, cover the pot, and simmer for about 45 minutes or until the lamb and potatoes are tender.
- Adjust the seasoning if needed and serve the Toyugun Shorbası hot, garnished with fresh parsley.
