Savory Lentil Stew (Mercimek Yemeği)

Ingredients

  • 2 cups red lentils
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the carrots and potatoes to the pot, and cook for 5 minutes.
  4. Stir in the tomato paste, cumin, and paprika, and cook for 2 minutes.
  5. Pour in the vegetable broth and add the lentils. Bring the stew to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
  6. Season with salt and pepper to taste.
