Ingredients
- 2 cups red lentils
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the carrots and potatoes to the pot, and cook for 5 minutes.
- Stir in the tomato paste, cumin, and paprika, and cook for 2 minutes.
- Pour in the vegetable broth and add the lentils. Bring the stew to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
- Season with salt and pepper to taste.
