Savory Pastry Puffs with Spiced Filling, also known as Karonga Curry Puffs, are a popular snack in Malawian cuisine. These delicious pastry puffs are filled with a flavorful spiced mixture and are perfect for serving as appetizers or enjoying as a snack.
Ingredients
- 2 sheets of puff pastry
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup cooked potatoes, diced
- 1/2 cup frozen peas
- Salt to taste
- Pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat the vegetable oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the diced potatoes and frozen peas to the spiced mixture, and stir to combine. Season with salt and pepper to taste. Remove from heat and let the filling cool.
- Roll out the puff pastry sheets and cut each sheet into 6 equal squares.
- Place a spoonful of the cooled spiced filling in the center of each pastry square.
- Brush the edges of the pastry squares with the beaten egg, then fold the pastry over the filling to form triangles. Press the edges to seal and crimp with a fork.
- Place the pastry puffs on a baking sheet lined with parchment paper. Brush the tops with the remaining beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
- Remove from the oven and let the pastry puffs cool slightly before serving.
