Ingredients

  • 2 sheets of puff pastry
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup cooked potatoes, diced
  • 1/2 cup frozen peas
  • Salt to taste
  • Pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the vegetable oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Add the diced potatoes and frozen peas to the spiced mixture, and stir to combine. Season with salt and pepper to taste. Remove from heat and let the filling cool.
  5. Roll out the puff pastry sheets and cut each sheet into 6 equal squares.
  6. Place a spoonful of the cooled spiced filling in the center of each pastry square.
  7. Brush the edges of the pastry squares with the beaten egg, then fold the pastry over the filling to form triangles. Press the edges to seal and crimp with a fork.
  8. Place the pastry puffs on a baking sheet lined with parchment paper. Brush the tops with the remaining beaten egg.
  9. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
  10. Remove from the oven and let the pastry puffs cool slightly before serving.
