Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup water
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cups chopped spinach
- 1 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add the water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool.
- On a floured surface, roll out the dough into a large rectangle. Spread the spinach and onion mixture over the dough, leaving a border around the edges.
- Sprinkle the crumbled feta cheese over the spinach mixture. Season with salt and pepper.
- Roll up the dough, starting from the long side, to form a log. Place the log on a baking sheet lined with parchment paper.
- Bake for 35-40 minutes, or until the pastry is golden brown.
- Let it cool for a few minutes before slicing and serving.
