Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 cups chopped spinach
  • 1 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Gradually add the water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  5. Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool.
  6. On a floured surface, roll out the dough into a large rectangle. Spread the spinach and onion mixture over the dough, leaving a border around the edges.
  7. Sprinkle the crumbled feta cheese over the spinach mixture. Season with salt and pepper.
  8. Roll up the dough, starting from the long side, to form a log. Place the log on a baking sheet lined with parchment paper.
  9. Bake for 35-40 minutes, or until the pastry is golden brown.
  10. Let it cool for a few minutes before slicing and serving.
