Ingredients

  • 2 large potatoes, grated

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the grated potatoes, chopped onion, eggs, flour, parsley, salt, black pepper, and paprika until well combined.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Scoop about 1/4 cup of the potato mixture and carefully place it in the hot oil, flattening it with a spatula to form a pancake shape.
  4. Cook the pancakes for 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil.
