Savory Pumpkin and Cheese Börek (Balkabağı Peynirli Börek)

Ingredients

  • 2 cups pumpkin, grated
  • 1 cup feta cheese, crumbled
  • 1/2 cup parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 12 sheets phyllo dough
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the grated pumpkin, feta cheese, chopped parsley, salt, black pepper, and nutmeg.
  3. Place one sheet of phyllo dough on a clean surface and brush it with melted butter. Place another sheet on top and brush with butter. Repeat with 2 more sheets.
  4. Spread 1/4 of the pumpkin and cheese mixture along the long edge of the phyllo stack, leaving some space at the edges. Roll the phyllo tightly around the filling to form a long cylinder.
  5. Repeat the process with the remaining phyllo and filling to make 3 more cylinders.
  6. Place the cylinders on a baking sheet, brush the tops with butter, and bake for 30-35 minutes, or until golden brown.
  7. Remove from the oven and let the börek cool for a few minutes before slicing and serving.
